Corto Olive groves are 100% planted in a state-of-the-art system called "Super High Density" (SHD). This modern technology permits the production of premium extra virgin olive oil from freshly-harvested olives that never touch the ground. Traditional Mediterranean production knocks olives onto the ground and picks them up later. Because of tree uniformity, SHD allows Corto Olive to produce consistent tonnage and a consistent flavor profile each year. No year-in/year-out cyclicality like Mediterranean producers. Using specially designed over-the-row "olive harvesters, we are able to cleanly pick the crop at ideal maturity, transport fresh olives to our mill and immediately process fragrant premium extra virgin olive oil.
